The Grill by Thomas Keller, Seabourn Quest

Adam D. Tihany has reimagined the dining venue previously known as Restaurant 2 on Seabourn’s Odyssey-class fleet. The new design transforms the space into a sophisticated steak house, catering to the culinary expertise and style of acclaimed chef Thomas Keller, whose partnership with Seabourn extends to the development of The Grill aboard the newest ship, Encore, due to launch late 2016. The Grill on the Odyssey class vessels features a strict ‘chef’s choice’ policy with no menus included. The venue’s gueridon service facilitates a unique interaction between the chef and diners.
The new restaurant redefines the intimate setting with curvilinear lines throughout the space. Structural arches along the main dining room take on a decorative element in polished metal. Additional curved wood coffers line the ceiling, referencing the ribs of a luxury yacht.

 

The venue is elegant and warm with a distinct masculine quality. Leather banquettes in a lush brown line the dining room, while luxurious brown and tan leather swivel chairs provide for the remaining seating. Metal mesh panels add interest at face of the bar and the hostess station. The design includes the addition of a carving station as well as wine decanting station. These areas, along with the bar, feature marble counter tops in an elegant emerald, which is reflected in the custom carpeting throughout the venue. In the main dining room, a highly effective shading system automatically controls how natural light enters the restaurant, while sophisticated wall sconces and cove lighting add to the overall warmth of the space.
